The first substitution we have used happens to be applesauce. It may not sound very tasty for cookies but it actually turned out amazing! Just use 1/4 for every egg in the recipe and it will be as if you put an egg in there! We actually used Cinnamon applesauce as it was the only thing I had at my house and going to the store for one thing is such a bother, so we tried it and they turned out so good! The cookies even had a hint of cinnamon making them even better. So, even if you don't use a certain kind of applesauce they can still turn out fantastic!
